Unstuffed Pepper Bowls: A Family Favorite!

Hey there, fellow busy parents! Looking for a quick, delicious, and toddler-approved dinner idea? Look no further! These Unstuffed Pepper Bowls are a hit in our house, and I’m sure they’ll be a hit in yours too. 🌟

Ingredients:

  • 1 cup rice

  • 1 cup corn

  • 1/4 cup chopped cilantro

  • 2 green bell peppers, chopped into toddler-friendly pieces

  • 1 lb ground beef

  • 1 can black beans, drained and rinsed

  • 1/2 to 3/4 cup sour cream (use dairy-free sour cream for a dairy-free option)

  • 1 cup shredded mozzarella cheese (optional, omit for dairy-free)

  • 4 slices bacon

  • 1 tsp garlic powder

  • 1 tsp cumin

  • 1 tsp onion powder

  • Salt and pepper to taste

Instructions:

Cook the Bacon:

  • Start by cooking the bacon in a skillet until it’s crispy and irresistible. Set it aside and chop it up using a food processor or, my favorite hack, kitchen scissors.

Cook the Ground Beef:

  • In the same skillet, cook the ground beef in the bacon grease until it’s beautifully browned. Season with garlic powder, cumin, onion powder, salt, and pepper.

Sauté the Bell Peppers:

  • Add the chopped green bell peppers to the skillet with the beef and bacon grease. Sauté for about 6 to 8 minutes, or until the peppers are soft and sweet. (Perfect for little teeth!)

Prepare the Beef Mixture:

  • In a large bowl, combine the cooked ground beef, sautéed bell peppers, black beans, sour cream, and optional mozzarella cheese. Mix well.

  • Return the mixture to the skillet and heat until the cheese melts (if using).

Cook the Rice:

  • Cook the rice according to the package instructions. Once cooked, mix in the corn and cilantro.

Assemble the Bowls:

  • Place a serving of rice in each bowl. Top with the beef and pepper mixture.

  • Drizzle with additional sour cream and sprinkle the chopped bacon on top.

Notes:

  • For a dairy-free option, omit the cheese and use dairy-free sour cream.
  • These bowls are perfect for little hands and big appetites. Plus, they’re customizable, so everyone gets what they love!
