Air Fryer Mongolian Beef with Jasmine Rice and Oven-Baked Green Beans

Today, I’m excited to share a flavorful and easy-to-make dinner recipe: Air Fryer Mongolian Beef with Jasmine Rice and Oven-Baked Green Beans. This dish is perfect for busy weeknights when you want something quick, healthy, and absolutely delicious. Plus, I’ll be using my favorite air fryer, Instant Vortex Plus 6QT ClearCook Air Fryer, which makes cooking a breeze!

Ingredients:

For the Mongolian Beef:

  • 1 lb flank steak, thinly sliced OR ready to eat stir fry beef

  • 1/4 cup cornstarch

  • 2 tablespoons oil

  • 3 cloves garlic, minced

  • 1 teaspoon fresh ginger, minced OR (1/2 teaspoon ground ginger)

  • 1/2 cup low sodium soy sauce

  • 1/4 cup water

  • 1/2 cup brown sugar

For the Jasmine Rice:

  • 1 1/2 cups jasmine rice

  • 2 1/4 cups water

  • 1/2 teaspoon salt

For the Oven-Baked Green Beans:

  • 1 lb fresh green beans, trimmed

  • 2 tablespoons olive oil

  • 2 cloves garlic, minced

  • Salt and pepper to taste

Instructions:

For the Mongolian Beef:

  1. Toss the sliced flank steak with cornstarch in a large bowl until evenly coated. Let it sit for 5 minutes.

  2. Preheat your air fryer to 400°F (200°C).

  3. Lightly spray the air fryer basket with oil. Place the beef strips in the basket in a single layer.

  4. Air fry for 8-10 minutes, shaking the basket halfway through, until the beef is crispy.

  5. Meanwhile, heat vegetable oil in a large skillet over medium heat. Add garlic and ginger, sauté for 30 seconds.

  6. Add soy sauce, water, and brown sugar to the skillet. Stir well and bring to a boil. Let it simmer for 6-7 minutes until the sauce thickens.

  7. Add the crispy beef to the skillet and toss to coat with the sauce. Cook for an additional 1-2 minutes.

  8. Serve on top of the jasmine rice.

For the Jasmine Rice:

  1. Rinse the jasmine rice under cold water until the water runs clear.

  2. In a medium saucepan, bring water and salt to a boil.

  3. Add the rice, reduce heat to low, cover, and simmer for 15 minutes until all the water is absorbed.

  4. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork before serving.

For the Oven-Baked Green Beans:

  1. Preheat your oven to 400°F (200°C).

  2. In a large bowl, toss the green beans with olive oil, garlic, salt, and pepper.

  3. Spread the green beans in a single layer on a baking sheet.

  4. Bake for 15-20 minutes until the beans are tender and slightly caramelized.

Tips and Variations:

  • For extra flavor, add a sprinkle of sesame seeds and chopped green onions on top of the Mongolian beef.

  • Substitute tamari for soy sauce to make the dish gluten-free.

  • Add a splash of lemon juice to the green beans before serving for a fresh twist.
